DIY Cold Brew Popsicles 3 Ways

Now that you know how easy it is to make cold brew from scratch, it’s time to start experimenting! Ice cubes are always a safe bet to cool down a drink without watering it down, but this summer we’re going all-in on popsicles — giving everyone’s favorite warm-weather treat a caffeine-boosted, homemade makeover.

In addition to their addicting, fresh-from-the-freezer taste, homemade cold brew popsicles are easy to make ahead and store in the freezer. This way, you can have a crowd-pleasing snack or dessert on hand for barbecues and block parties all summer long.

1. CLASSIC COLD BREW POPSICLES

Ingredients:

  • 2 ½ Cups Cold Brew
  • ½ Cup Sweetened Condensed Milk*
  • Handful of coffee beans

*Dairy-free alternative: ¼ cup sugar and ½ cup non-dairy milk of your choice

Instructions:

  1. Whisk together cold brew with sweetened condensed milk or non-dairy and sugar mixture until sugar dissolves.
  2. Add 3-4 coffee beans to each popsicle mold before filling with creamy cold brew.
  3. Freeze until set.

2. BLACK-AND-WHITE LAYERED COLD BREW POPSICLES

Ingredients:

  • Handful coffee beans
  • 2 ½ Cups Cold Brew
  • ½ Cup Sweetened Condensed Milk*

*Dairy-free alternative: ¼ cup sugar and ½ cup non-dairy milk of your choice

Instructions:

  1. Add 3-4 coffee beans to each popsicle mold before filling half-way with cold brew.
  2. Freeze until set, 1-2 hours.
  3. If using non-dairy milk instead of sweetened condensed milk, take this time to whisk together milk and sugar until sugar dissolves.
  4. Fill remainder of popsicle molds with sweetened condensed milk or sugar and non-dairy milk mixture.
  5. Return to the freezer until solid.

3. COCONUT VANILLA COLD BREW POPSICLES

Ingredients:

  • 2 ½ Cups Cold Brew
  • ½ Cup Unsweetened Coconut Milk
  • 2 ½ Teaspoons Pure Vanilla Extract
  • ¼ Cup Sugar
  • Handful coffee beans

Instructions:

  1. Whisk together cold brew with coconut milk, sugar, and vanilla extra until sugar completely dissolves.
  2. Add 3-4 coffee beans to each popsicle mold before filling with creamy cold brew mixture.
  3. Freeze until set.
